We are setting up an online store, our customer has the categories well defined (shirts, pants, shorts, shoes, etc) and he also manages the products by brands (adidas, nike, H&M, etc), I have looked on Odoo and it seems that it only manages categories but no brands, is there a way to create and asign a brand to the products?

Without any additional modules, you can create an e-commerce category called Brands and sub-category for each brand and assign each product to it's brand. E-Commerce module allows several e-commerce category for a single product.
