Salesperson should be a standard column you can sort on from the Quotations table view, or you should be able to add it from the three dots in the right-hand corner of the screen.  Then, click the column header label to sort ascending or descending.  For streets or other address elements, there appears to be no out of the box column for this in table view, and I don't see anything related to addresses in the custom filters list under the funnel icon that lives next to the action gear icon.  So, that would probably have to be a programming customization.
